The olive oil quality criteria have been proposed by the International Olive Council, have been adopted by the European Union and are presented in Regulations EC 2104/2022 and EC 2105/2022. The quality of olive oil is affected by a multitude of factors from the stage of development of the fruit to its oiling and storage.
